Muttai sadham Egg rice asaiva Samayal 
Muttai sadham Egg rice is the simple and easiest recipe in asaiva samayal, which is commonly pepared in Tamil nadu for tiffin. There are many types of variety rice recipes are in saiva samayal.  This recipe helps you to prepare emergency but delicious samayal for family members and relatives.

Ingredients for asaiva samayal Muttai sadham (Egg Rice)
Basmati rice –
Egg – 4
Chopped onion – 2
Ginger garlic paste – 1tsp
Pepper powder – 1tsp
Oil – 4tsp
Salt as required
Curry leaves - little
Chopped coriander leaves for garnishing.

How to Prepare Muttai sadham Asaiva Samayal
Clean soak basmati rice for about ahalf an hour
Pressure cook the soaked rice by adding half tsp of salt
The cooked rice should be non sticky like biryani
Take a pan pour oil and add ginger garlic paste
Then add onion and chipped chillies, fry well
When the onions becoming golden brown add egg and salt
Now add pepper powder and mix well.
Fry until the egg becomes brown and separated into small pieces.
The add the cooked rice and mix in sim flame for three to five minutes.
Muttai sadham egg rice is ready to taste.
Garnish with coriander leaves and curry leaves
You can have this Muttai sadham with plain or vegetable kurma.

Verkadalai – 100gm
Dry chillies – 2
Tamarind – little
Salt as per taste

How to make Verkadalai chutney for Idli and Dosa

  1. Dry fry the Nilakadalai or Verkadalai or peanut along with chillies.
  2. Then let it to cool for some time.
  3. If you want you can remove the skin part, but with skin is very nutritive.
  4. Then add the remaining ingredients and grind like usual coconut chutney.
  5. If you are diet concerned, prepare Verkadalai chutney with out coconut.
  6. Finally garnish with mustard and curry leaves.

    Add sambar powder, turmeric powder, salt, add little water.

    Mullu Murukku Tamil Recipe Ingredients
    Boiled rice  - 1 kg
    Urad dal  - 300 g
    Sesame  - 25 g
    Asafoetida - 1/2 tsp
    Butter - 1 cup
    Chilli powder – 2tsp
    Oil - 1 Litre
    Salt – as required

    How to make Rice Butter Mullu Murukku Recipe Tamil nadu Style
    Clean the rice, soak it for about three hours. Dry it in the shadow and grind it by rice grinding mill.

    Dry fry the urad dal and grind nicely. Dry fry the sesame and keep it aside.

    Just warm (should not heat) the butter, add half of the rice flour, urad flour, salt and sesame.

    Heat 3tsp of oil and mix with the above prepared flour. Mix well and add little water and make like chapatti flour.

    Then by using different murukku achu preprare Mullu Murukku, kai arisi murukku, thenkuzhal murukku and achu muruku .

    Kara kuzhi paniyaram Recipe Ingredients
    Idli rice - 1/2 kg
    Ulad dal  - 50 g
    Fenugreek seed – 1tsp
    onion - 3
    Curry leaves – little
    Coriander leaves  - little
    Green chillies - 3
    Bengal gram dal - 1 tsp
    Cumin seed- 1/2 tsp
    Asafetida a pincg
    Oil - required
    Salt - required

    How to Prepare Kuzhi Paniyaram Batter Recipe
    Soak the rice and urad dal (Fenugree seeds with urad dal) separately for about four hours, grind (karakarappaga) and mix salt.
    This should be prepared left for about 24 hours to get fermentation.
    Chop the onion, curry leaves, coriander leaves, and chilli. Keep it aside
    Now take a pan, add little oil and put mustard, cumin seeds, Bengal gram, asafetida one by one.

    Food color (orange) - A pinch

    Mango or Pineapple or banana – ¼ cup (piece)

    How to Prepare Saravana bhavan rava kesari recipe
    Fry the rava by adding a tsp of ghee, fry until it becomes golden brown and shiny.
    Take a  pan and pour little oil or ghee and sauté the Cashew nuts, cardamom and  dry grapes. Keep it aside.
    Now add the milk and water in the pan and let to boil. Meanwhile mix the food colour with little water.
    Add the food colour in the boiling water. Then add the rava and stir continuously to avoid lumps formation.
    Finally add sugar and stir for a minute and add ghee. Mix well and add the fried Cashew nuts, cardamom and dry grapes.

    Ø  Add some cardamom with milk while boiling. This will keep the milk fresh for long time.

    1. Wash and soak the Biryani rice half an hour before the preparation.
    2. Take a vessel and pour oil, put cinnamon, clove and cardamom one y one.
    3. Then add the ginger garlic paste, stir well and add the chipped onion.
    4. Fry the onion until it becomes golden brown and add the tomatoes.
    5. Fry fro two minutes and add the chopped mutton pieces, stir continuously.
    6. Add curd, chilli powder and lemon juice. Mix well together.
    7. Add little salt, keep the stove in medium flame and let the mutton to semi cook.
    8. Now add the rice and stir for a minute, add ¼ lit of water and salt.
    9. Cook well and until the water evaporates well (you can use pressure cooker also)
    10. Remove it from the stove and add the ghee and dalda. Mix without breaking the rice.

    Thayir Pachadi Varieties Best Biryani Side dish Tamil Preparation


    Thayir Pachadi Varieties
    There are different types thayir pachadi varieties are prepared in tamil nadu as a side dish for meals.   Thayir pachadi recipe preparation is very simple,  easy and very nutritious too. It is very healthy because we use the raw vegetable for this thayir pashadi preparation. The common vegetables used are tomato, Beetroot, carrot, vellarikka (cucumber), onion, Nellikai and vazhaithandu.
    Best thayir pachadi for biryani: vengayam thayir pachadi (onion thayir pachadi) and cucumber thayir pachadi are the excellent combination for Tamil veg and non-veg  biryani.

    Vengayam thayir pachadi: This is usual onion pachadi always use thinly chopped onion and fresh curd.  
    Vellarikka thayir pachadi: Use thin slices of cucumber and one finely chopped tomato for cucumber curd pachadi.
    Vazhaithandu thayir pachadi : Remove the outer layer and chop the Vazhaithandu. Grind and prepare the paste of ( 1 chilli and 2tsp grated coconut). Add this paste in the curd with Banana Stump and sauté with mustard.
    Carrot thayir pachadi: add chopped cucumber and carrot in fresh curd with salt and sauté in usual manner.

    Then add the ginger galic paste and curry leaves , fry in sim flame
    Then add the chopped onion and tomatoes. Fry until the water comes our from it (5min in sim)
    Then add all the powder ingredients, drain the water from the rice and add with it, mix well.
    Add 3.5 cup of water, add salt and close the lid, leave a whistle and switch of the stove
    Open it after the exit of pressure and add the remaining ghee and decorate it with coriander leaves

    Today’s special in my blog is sweet recipe. Festival samayal tamil nadu adhirasam recipe Preparation is very famous during the important festival days like Diwali, pongal and new year.   adhirasam recipe in Tamil nadu style is my favorite sweet dish my grand mother usually prepare this adhirasam recipe with rice flour and jaggery, alternatively she use sugar also but the taste is very traditional when she use jaggery.
    Ingredients required for Festival Samayal Tamil nadu Sweet Adhirasam recipe  
    Raw rice (pacharisi 1 kg
    Jaggery – 750gm
    Cardamom – 5gm
    Gingelly (seasame) oil – little
    Ghee – 25ml

    How to make Festival samayal Tamil nadu Sweet adhirasam recipe  
    This is same like adhirasam recipe mallika badrinath preparation,  try it for this diwali.

    Soak the rice in water for about one hour and drain the water.
    Dry the rice in the shadow by putting on a white cloth.
    Then grind nicely and filter it in a solid filter.
    Prepare jiggery syrup (kambi patham – take a drop and put on little water – it becomes solid ball)  
     Then put the rice flour and stir continuously with out leaving.
    Then add the cardamom powder and ghee, stir continuously.
    Form it evenly and spread one spoon of ghee and close it tightly.
    Let it cool for 2 days and make adhirasam shape and fry in gingelly oil
    Delicious deepavali sweet adhirasam is ready to taste.
