Ingredients for kothamalli chutney recipe in Tamil Style Prepration
Coriander leaves – small bunch
Coconut - 1/4 cup
Small (samabr)onion - 100 g
Tomato - 1
Green chillies - 2
Salt - 1/2 tsp
Tamarind – coin size

Kothamalli chutney recipe Sautéing ingredients
Mustard - 1/2 tsp
Broken channa Dal (kadakai paruppu) - 1/2 tsp

  • Clean and chop the Kothamalli leaves (coriander). Cut and wash the small onion.
  • Wash and chop the tomato and chilli.  Keep ready the grated coconut.
  • Take a frying pan add oil and sauté the urad dal, kadalai paruppu.
  • Then add the onion, chreen chillies and tomatoes, tamarind and coconut.
  • Finally add the chopped coriander leaves. And let it sauté for five minutes
  • Let it to cool and grind the delicious Kothamalli Chutney for idli by adding salt.

Tamil style Biryani Recipe Diwali Special Preparation is something special in taste. The taste is excellent with Korma and onion curd. Tamil style biriyani is prepared in different styles. Each style represents the taste of a particular region.  The main three varieties of Tamil style biryani recipes are as follows.
1.   Tamil style mutton Biryani Recipe
2.   Tamil Nadu style chicken Biryani
3.   Tamil Nadu style vegetable Biryani

Tamil nadu style veg biryani is usually prepared in hotel taste by adding all the vegetables. The method for the preparation of Tamil Non veg biryani types chicken and mutton are almost same.
Here I have given idea of How to make veg biryani Tamil style?

Ingredients Needed for Tamil Vegetable Biryani
Basmati rice - 300 g
Tomato - 3 gm
Onion -  2
Potatoes - 100 g
Carrot - 100 g
Peas – 25gm
 Beans – 25gm
Corn – 25gm
Chilli powder - a teaspoon
Turmeric powder - quarter teaspoon
Salt - to taste
Curd - two tablespoon
Lime  - half
Ginger garlic paste – 2tsp
Green chillies - two
Coriander leaves – little
Mint – little
brinji leaf - 2
Oil - 75 ml
Oil - two tablespoons
Cardamom, clove, cinnamon - each two

How to make Vegetable biryani Tamil style
Clean and finely chop the vegetables./
Cut the onion and tomatoes, Keep it aside.
Wash and soak the Basmati rice for about 20minutes.
Take a pressure cooker, add 1tsp oil and 1tsp ghee, heat it.
Then add the Cardamom, clove, brinji leaf and cinnamon,
Add onion and ginger garlic paste,
Fry it and add tomatoe, chillies, chopped coriander and mint leaves.
Let it to fry for 2 minutes and add chilli powder, turmeric powder and salt.
Then add all the chopped vegetable and curd, let to fry for 5 minutes.
Now add the Basmati rice and fry for a minute, add double the amount of water.
Add salt and cover the lid. Switch off the stove for a whistle.
If once the pressure goes out, remove the lid and add the remaining ghee,
Now it smell like tamil style chicken biryani hotel preparation,
Garnish the Tamil style biryani recipe with coriander and mint leaves.
The best side dish for Tamil style veg biryani is Vegetable Korma and Onion curd.
If you want the veg biryani taste like Tamil style mutton biryani add 2tsp of instant Biriyani masala instead of chilli powder.

Diwali 2013 Recipe Adhirasam Recipe in Tamil Nadu Preparation

How to make adhirasam in tamil style
Adhirasam recipe is the most commonly prepared sweet for Diwali festival is my all time favorite. In my childhood, the taste of Adhirasam is excellent with jiggery than sugar preparation. You should be very careful while taking vellam jiggery pagu that is very important for the preparation of diwali special Adhirasam recipe.  
Raw rice (paccharici)
 1 & 1/2 cups 
Jaggery vellam
 1 cup 
Sesame
 1 tblsp 
cardamon powdered
 2 pinches 
 Ghee 
 1 tblsp 
Oil
As required
How to make Tamilnadu Adhirasam
Wash and soak the raw rice for three hours and dry in shadow for thirty minutes. Then grind it nicely in rice machine. Sieve it if you want otherwise use it as such.

Powder the jaggery and warm it with water just to drench it. When its totally soluble, channel it to take dusts. Again put in fire and prepare jaggery syrup.
Oil in medium heat dependably and blend frequently. Take care of the consistency by spilling drops in water kept in a little vessel. At starting stage, the syrup disintegrates as you spill in water, then at next stage, it will form thread like string in the water, yet gets broke down when you touch. After this, at one stage, the syrup gets thicker and when you spill in water, then it wont get broke down and you can accumulate it with your fingers and structure a round ball.

This is called rod or thread consistency and this is the stage, you need to put off the heat. Promptly pour it to the flour small by small. Then add cardamom powder and dry ginger powder to the flour and stir nicely.
Keep this mixture for about one day to het fermentation then only it will give soft texture. Next day prepare small ball and spread line chappati. If it is little hard just add warm milk and ghee.

Take a pan heat oil and put this and fry like poori and press the excess oil. Delicious Adhirasam recipe is ready to taste.

Jeera fried rice recipe Indian Style Tasty preparation is prepared in all hotels of Tamil Nadu and if you are trying to prepare this at home just follow the below mentioned method. Jeera rice is one of the kids favorite variety rice too. 

Jeera fried rice recipe Ingredients
Basmati rice – 250gm
Jeera - 3tsp
cashew nuts – 3 tsp
Black pepper – 5
Brinji Ilai(Bay leaf ) - 1
water Required
Sugar (Askka)
tsp clove (lavangam )- 3
Cinnamon (Pattai) powder – 1/4tsp
 Big onion – 3
Fresh ghee – 5tsp
salt as required

Jeera fried rice recipe Indian Style Preparation
·         Wash  Basmati rice and soak for half an hour in a slat mixed warer.
·         Take a pan and pour ghee and heat in simflam
·         Then add chopped onion and fry until it becomes golden in colour
·         Transfer the fried onion and fry the cashew nuts in the same ghee
·         Then transfer the cashew and fry the jeera, black pepper, bay leaf.
·           Drain the water and add the rice, fry for 5 minutes
·         Then add sugar and mix well. Stir nicely and mix pattai powder.  
·         Add water and mix required salt. Let it to cook in low flameor (use pressure cooker)
·          If rice is cooked ( non sticky)  add cashew nuts and stir without breaking the rice.
·         Jeera fried rice recipe is ready to taste, now serve the hot with dal or kurma.

Ingredients needed for sukku kuzhambu recipe
Sukku (dry Ginger) – ring finger sized
Pepper – 2tsp
Fenugreek seed – 1tsp
Mustrad – 1tsp
Urad Dal – 1tsp
Tamarind – lemon sized
Small Onion – One cup (chopped)
Oil – 3tsp
Tomato – 1 big (chopped)
Turmeric powder – a pinch
Curry leaves – little
Chilli powder – ½ tsp
Salt – as per taste

How to Prepare Sukku Kuzhambu Recipe
Fry Sukku, pepper and fenugreek seed without adding Oil (dry Fry)
Make a fine powder of the above mixed ingredients by using a mixer
Take frying pan, add oil and fry the mustard dal, urad dal and curry leaves.
Then add the small onion, and fry until it becomes golden brown.
Add the chopped tomatoes and tamarind juice mix well.
Then add salt, chilli powder and turmeric powder one by one and stir continuously.
Then add powdered sukku mixer and add little water if necessary.
Let  Sukku Kuzhambu to boil in sim flame for 10 to 15 minutes
When the oil separates from mixture is the time to remove it from the flame.
Sukku Kuzhambu Recipe is the best side dish for rice.

Jeera Kashayam Recipe Ingredients
Jeera (cumin seeds) 2tsp
Dry ginger (inji) powder 1/2tsp
Pepper powder 1/2tsp
Turmeric powder a pinch
Milk 1 cup
Jaggery as per your taste

How to Make Jeera Kashayam Recipe
Take a cup of milk and add equal amount of water.
Boil the water added milk, add Jeera and keep in low flame
Then add the dry ginger powder, pepper powder. Mix well
Then add the turmeric powder. Boil in sim flame until the milk reduces in to a cup.
Finally add the Jaggery and leave it for two minutes.

Sweet Pongal Recipe 
This is my favourite Sweet Pongal Recipe Tamil Style Preparation. In Tamil nadu pongal recipe Tamil style is cooked in two types.
1.   Ven ponal Tamil Style (Kahara pongal)
2.   Sweet Pongal or sakkarai pongal recipe Tamilnadu style
The sweet recipe is prepared during some special occations like festivals but the Tamil ven pongal recipe is prepared for breakfast with coconut chutney and sambar.

Ingredients needed for Tamil sweet pongal recipe
Raw rice Pacharici – 250gm
Green gram Moong dal – 150gm
Milk - 250ml
Cashews – 10
Dry grapes – 10
Cardamom powder 1/4tsp
Ghee – 100ml
Jaggery or Sugar – 300gm

How to make sweet pongal Tamil Style
Soak rice in water and sauté moong dal in low flame until it becomes shiny golden colour.
If you want to prepare Sweet Pongal Recipe in pressure cooker, put the rice, dal and milk together.
Then add the remaining ingredients and cook of five minutes without lid.
and If you are doing in a vessel first add the water, if it boils add rice and milk.
When Rice cooked half add the moong dal, let to cook nicely.
Then add jaggery, and ghee. Let wait the jiggery to melt and observed completely.
Finally add the cardamom powder, fried Cashews, dry grapes.
Add the remaining ghee, Sweet Pongal Recipe Tamil Style Preparation is ready to taste. Serve hot.

  • Then add the semi cooked vegetables, add salt and let to boil for five minutes.

Sweet Pongal Recipe Tamil Style Sakkarai Pongal Preparation

This is Sweet Pongal Recipe Tamil Style Sakkarai pongal preparation for this Pongal Festival 2013. Sakkarai pongal preparation is very common in Tamil nadu during Pongal festival. People usually prepare Ven Pongal Recipe Tamil Style and Sweet pongal preparation during the first day of Pongal. Ven pongal is also called Milk and Rice pongal preparation with out adding salt or masala items.

Ingredients for Tamil Sakkarai Pongal preparation
Raw Rice (Paccarici) - 1/2 kg
Green gram dal - 200 g
Jaggery - 1 kg
Milk - 1/2 liter
Ghee- 100 g
Cashew and raisins - 100
Cardamom - 10
Grated Coconut - 1

How to prepare Sweet Pongal Recipe Tamil nadu Style
  1. Wash and soak the raw rice for about ten minutes,
  2. Fry the green gram dal into golden brown with out adding oil,
  3. Add 1tsp ghee and fry the cashew nuts, keep it aside
  4. Make powder of the Cardamom and powder the jaggery.
  5.  Take a vessel and add 1 lit of water and milk, boil it,
  6. Now add the rice in the vessel and cook it half,
  7. Then add the fried green dal and mix gently,
  8. After 10 to 15 minutes add the jaggery and mix continuously,
  9. Now add the cardamom powder and ghee,
  10. Let in the sim flame for five to ten minutes and add the fried cashew and raisins.
  11. Sweet Pongal Recipe Tamil Style preparation is ready to taste.
  12. You can prepare Sweet rava pongal preparation in the same method by using broken rice called rava.

Make Tamil Nadu Style Sambar Recipe Side dish for Idli and Rice

Tamil style sambar Recipe

Tamil Nadu Style Sambar Recipe Preparation is very easy and delicious. I usually make Mullangi sambar Tamil style for rice which is my favorite. It is the best side dish for rice and idli.

Tamil style sambar Ingredients
Toor dal – ½ cup
Any one or mixed vegetables – 1 cup
Sambar onion – ½ cup
Tomato – 1
 Garlic 3 clove
Tamarind juice ½ cup
Coriander leaves - little
Salt and oil as per your taste
Sautéing ingredients
Mustard – 1tsp
Oil – little
Cumin seeds- 1tsp
Curry leaves – little
Asafetida – a pinch

How to make Tamil Style Sambar 
  1. Take the toor dal add 1tsp of castor oil (velakennai)
  2. Then add garlic, little curry leaves and boil it by adding 1/2lit of water.
  3. Chop the onion, tomato and vegetables. Keep it aside.
  4. Take a vessel, add little oil and put the sautéing ingredients one by one.
  5. Then add the onion, tomatoes and vegetables fry well.
  6. Now add the boiled and mashed toor dal, salt and Tamil style sambar powder.
  7. Mix together and finally add the tamarind juice, let it to boil for 15 to 20 minutes.
  8. Garnish with chopped coriander leaves. Sambar Tamilnadu style is ready to taste.
  9. Note : You can prepare by compensating vegetables to onion, add more onion and tomatoes. This is called Tamil nadu style idli sambar. 

Tamil nadu style Rasam Recipe Preparation

Rasam tamilnadu style Preparation is very special in taste almost all state people like the taste of Tamil nadu style rasam recipe.  The most commonly prepared and my favorite varieties are Tamil style tomato rasam and jeera pepper rasam. My mon prepare pepper rasam tamil style to get relief from cold and cough.

Ingredients needed for Tamil style tomato rasam
Ripped tomatoes 2
Tamarind - 4 pieces
Cumin seed Jeera – 1tsp
Pepper – 1tsp
Red chillies -2
Chenna dal – 1tsp
Urad dal – 1tsp
Curry leaves – little
Garlic – 4 cloves
Coriander leaves - little
Asafotida – a pinch
Mustard – 1tsp
Sugar a pinch
Salt and oil as per taste

 How to prepare Tamil style tomato Rasam
  • First prepare Tamil rasam powder by frying urad dal, chenna dal(kadalai paruppu), little curry leaves,  dried red chillies, jeera, pepper. Grind a nice powder in the mixer.
  • Soak tamarind and extract the juice, keep it aside. Take a vessel add a cup of water and boil then add the tomatoes.
  • Mash the tomatoes; add tamarind juice, sugar, 3ooml of water and salt. Keep it aside.
  • Adjust the salt and sour taste as per your taste by adding water. Crush the garlic into fine paste.
  • Now take a pan add little oil, fry the mustard, curry leaves, garlic paste, and rasam powder (do not over fry),
  • Now add the tomato mixer water and let to one boil (by forming foam)
  • Finally add the chopped coriander leaves and Asafotida, close the lid for ten minutes.

  • Fry the coconut by adding 1/2tsp of oil, soak tamarind and take the juice by adding enough water.
  • Take a vessel, add oil, and sauté the mustard, asafetida and curry leaves.
  •  Then add poondu and onion. Fry until it becomes golden brown.
  • Now add the tamarind juice, let it to boil for a minute and then add the ground powder and friend coconut.
  • Add salt, turmeric powder and a cup of water. Let it to boil for 5 minutes in medium flame.
  • It tastes like Tamil Vatha Kuzhambu recipe.

Ingredients for Milagu Rasam Ingredients  
Tomato 3
Pepper Milagu 1tsp
Tamarind Juice ½ cup
Garlic 6
Jeera 1tsp
Lentil paste 1/4cup
Mustard 1tsp
Asafetida a pinch
Sesame oil 1tsp
Red chillies 5
Coriander leaves and curry leaves as required.

How to Prepare Milagu Rasam Recipe
The prepetition method is very simple you can give this Milagu Rasam for cold and cough like soup.

  • Boil the tomatoes and make a paste
  • Add tamarind juice with tomato juice
  • Fry cumin seeds and pepper with out adding oil and make a powder.
  • This is called Milagu Rasam powder. You can also add 1tsp of each dal too
  • Make a paste of garlic and curry leaves
  • Boil the Milagu Rasam extract (tomato and Tamarind water)
  • Add salt, rasam podi, and lentil paste
  • Then add the garlic curry leaves paste.
  • Keep in stove up to foam stage, remove just before boiling.
  • Take a sautéing vessel, add sesame oil and heat in low flame
  • The add the mustard, asafetida, curry leaves and red chillies
  • Finally garnish Milagu Rasam with chopped coriander leaves
  • Jeera milagu rasam recipe is ready to tast, best side dish for rice
  • This is also called Milagu soup, best Tamil medicine for indigestion, cold and cough.
