Dry fry the garlic and  Cardamom, keep it aside
Then grind all the ingredients nicely except jiggery, ghee and honey.
Then add little water and prepare the powder like a fine paste.
Then take a thick pan and pour the past, garlic and Cardamom
Add little ghee and jiggery, mix evenly.
Stir nicely and add the remaining ghee whenever needed.
At the end the ghee separates from the mixture, now switch off the stove.
Add honey and mix thoroughly and pack in an air tight jar.

Water – 1/4 liter

I like all the tamil brahmin diwali recipes Prepared at home. Here you can follow this method to prepare Tamil diwali sweet recipe Badusha at home in Brahmin style.  
1.   Take a basin and pour the maida flour. Make a pond in the centre of the flour.
2.   Then add water, dalda, lemon salt and soda in the middle and mix like chapatti flour.    
3.   Leave it for 10 minutes and make like small lemon sized balls.
4.   Then press the middle of the ball by your finger and this shapes like Badusha.
5.   Prepare the sugar syrup by adding ¼ lit water for 1/2kg sugar, boil it for 10 – 15 minutes and stop the flame at sticky consistency.
6.   Now fry the maida balls at very low temperature. First they settle at the botton and float after a minute.
7.    Fry until it becomes golden brown (fully fired). Remove it and filter the excess oil.
8.   Now add the fried Badusha in the warm sugar syrup and let it be for five minutes.
9.   Remove it after five minutes and add extra sugar syrup on each.

Boiling Ingredients
Rice – ½  kg
Toor dal – 200gm
Turmeric powder – a pinch
Sambar onion – 3/4 cup

Onion - 100 g
Tomato - 200 g
Carrot - 1
Green Chillies - 4
Salt – little
Sambar powder – as per taste
Jaggery – a lemon sized
Tamarind - a lemon size

Sautéing Ingredients
Oil – as per your taste
Mustard - 1 spoon
Sambar onion – ¼ cup
Curry leaves – little
Fenugreek seed – ¼ tsp
Ghee – 25gm
Cumin seed – 1tsp
Garlic – 6clove
Coriander leaves for garnishing

How to prepare sambar sadam Tamil Style
You can easily Make sambar sadam Tamil style preparation. Time required for cooking is just half an hour.
·         Soak the rice and dal for ten to fifteen minutes.
·         Then add turmeric powder, oil, salt and onion.
·         Add four cups of water and pressure cook it.   
·         Chop the given vegetables and cook it by adding salt and turmeric powder.
·         Now add the cooked vegetables with cooked dal and rice mix.
·         Add 10gm of ghee and mix it gently.
·         Now sauté with the given ingredients and add the remaining ghee and mix well.
·      Sambar saddam in Tamil nadu style recipe is ready to taste.

Kollu Rasam is the delicious and very tasty rasam recipe. In Tamil nadu people usually prepare this recipe to cure common cold, cough and chest congestion. Kollu recipes are medicinally and important in siddha maruthuvam. Here I have given the very simple and easy preparation of  Kollu Rasam recipe in Tamil method.

Ingredients required for Tasty Rasam recipe Kollu Rasam
Kollu (horse gram ) water – 250ml
(Boil 100gm of kollu in a pressure cooker  and extract the juice)
Tamarind – coin size
Pepper – 1/2tsp
Cumin seed – 1/2tsp
 Curry leaves – little
Coriander leaves –  little
Garlic –  4
Red dry chillies – 2
Salt – as per taste

Simple Rasam recipe Kollu Rasam Preparation
  • Soak the tamarind and extract juice. Mix the tamarind juice with kollu soup,
  • Dry fry the jeera, pepper and curry leaves and prepare the rasam powder or,
  • Use the ready made rasam podi available in the market and keep it aside,
  • Mix the rasam podi and smashed garlic with with kollu juice,
  • Add salt and keep on the stove, switch off in foam stage (just before boiling),
  • Sauté mustard I 1/2tsp of oil, add red chillies and coriander leaves. Mix with kollu rasam
  • Sprinkle asafetida and add chopped coriander leaves.

1.   Fry the Bengal gram flour to golden colour by adding a tsp of ghee.
2.   Prepare the sugar syrup by adding the sugar in a cup of water.
3.   The correct sugar syrup consistency is to become a ball like when adding a drop in  little water.
4.   Now slowly add the Bengal gram flour with the sugar syrup and stir continuously by putting the flame in sim.
5.   Finally add half amount of the ghee and stir nicely.
6.   Spread the remaining the ghee in a plate and transfer the mix into the plate.
7.   Spread evenly and cut into small pieces.

1.   While washing fish, add some salt with the water and wash it. This will remove the bad fish odour.

Onion – 1/4kg

Chilli powder – 2tsp
Coriander powder – 3tsp
Turmeric powder – ½ tsp
Cardamom – 2
Cinnamon – 1
Clove – 2
Ginger garlic paste – 1tsp
Salt as required
Oil as per your taste

How to prepare dhamu samayal recipe Non veg Recipe Palak Chicken Masala
  1. One of my favorite in chef dhamu samayal recipes is Palak Chicken Masala recipe. Here is the very simple and easy prepareation.
  2. Take a pan and add some oil, heat it and fry Cardamom, Cinnamon and clove.
  3. Clean the chicken and Palak keerai separately and keep it aside
  4. Finely chop the onion and tomatoes and keep it aside.
  5. Then add the chopped onion, ginger garlic paste and tomatoes.
  6. Fry in medium flame for a minute and add chilli powder, turmeric powder and coriander powder.
  7.  Add a little water and fry until the raw smell goes.
  8. Now add the cleaned Palak keerai and chicken and fry nicely by adding salt.
  9. Add water if necessary and cook the chicken and Palak keerai.
  10. When it becomes gravy from remove from the stove and serve hot.

Raw rice (pacharici)- 2 cups
Wheat flour - 1 cup
Jaggery – 2 cups
Cardamom powder - 2
Gingelly oil – required

How to Prepare Sweet Appam Recipe Tamil Nadu Style
  1. Soak raw rice for about 2 hours and grind nicely.
  2. Dissolve Jaggery in warm water, filter it and mix with wheat flour.
  3. Then mix this with ground rice flour, cardamom power and keep it ready.
  4. Take a pan pour half lit of oil, heat it.
  5. Then pour one big scoop of Appam mixture in the oil.
  6. Turn it down when it floats on the oil.

This is Recipe of Poondu Chutney in Tamil Nadu Style Preparation. Garlic is medicinally very important kitchen cooking ingredient.  There are different types of Poondu chutney varieties are prepared.  The medicinal properties of Poondu are many. It reduces the blood pressure and bad cholesterol. Here I have given the idea of how to make poondu chutney easy and simple.

Poondu Chatni Ingredients
Poondu (Garlic) 20 to 25 cloves
Tomato – 1
Tamarind – coin size
Red chillies – 6
Salt as required

Sautéing ingredients
Sesame oil – little
Mustard and urad dal – little
Curry leaves – little
Asafotida  a pinch

How to Prepare Poondu Chutney in Tamil Style 
Chop the tomatoes into small pieces and keep ready.
Take a pan and add little oil, fry the chillies and keep it ready
Then fry the garlic in the same oil, keep it separate.
Then fry the tomato pieces and keep it separate.
Now add the fried ingredients together with salt and tamarind.
Grind nicely and sauté with the given ingredients.
Boil it for five minutes. Tasty Spicy Poondu Chutney Tamil style is ready to taste.
Note: Sesame oil gives nice odour and taste.
If you want you can add one or two extra tomatoes (thakkali poondu chutney )and reduce tamarind.
If you want to keep this for more than a day, add more sesame oil.

Maida flour – 2cups
Potato – 2
Chopped onion – 1
Curry leaves and Coriander leaves – little
Garam masala – 1/4tsp
Salt as required
Oil as required

How to Prepare aloo paratha tamil Samayal Recipe
  • Take the Maida flour, add little water and oil, prepare like chapatti flour and keep it for 2 hours.
  • Boil the potatoes by adding little salt and mash it nicely and keep ready.
  • Take a pan pour little oil and fry the onion and add garam masala on the warm onion.
  • Now mix the onion, coriander, curry leaves, salt and with mashed potato.
  • Make small potato balls and prepare paratha and stuff the potato in paratha.
  • Take a dosa tava and make aloo paratha tamil recipe same like chapatti preparation.

  • Note: While preparing Aloo paratha for kids, you should not add the chopped green chillies.

Chopped Onion - 1
Small tomato - 1
Green chillies - 2
Ginger garlic paste - 1 tsp
Oil - 4 tablespoon
Chilly powder – 1tsp
Coriander powder - 1 tsp
Cumin powder – ½ tsp
Turmeric powder – ¼  tsp
Tamarind - small lemon size
Grated Coconut - 2 table spoon
Sesame - 2 tsp
Peanut - 2 tsp
Cinnamon - a small piece
Ani seeds (sombu)- 1/4tsp
Coriander leaves, Curry leaves -  little
Salt -  as required

How to Prepare Ennai Kathirikai or Gravy Brinjal Gravy

  1. Usually children don’t like the taste of brinjal but if you give this brinjal gravy for roti and dosa side dish they like the taste very much.
  2. Take a pan and pour little oil, add the chopped brinjal and let it to fry in medium flame for five minutes.
  3. Remove when it becomes golden brown and keep it aside. Prepare tamarind juice by adding little water. Grind coconut and prepare paste like form.
  4. In the same pan add cinnamon, curry leaves, ani seeds, ginger garlic paste and onion.
  5. When the onion becomes golden brown add all masala powders and green chillies.
  6. Now add the tamarind juice and let it to boil for some time, after the raw smell goes add the fried brinjal and salt.
  7. Add the ground and coconut and required amount of water. Keep in low flame and let it to boil for five minutes.
  8. Finally garnish with chopped coriander leaves.   Delicious brinjal gravy recipe is ready to taste.
  9. You can prepare this type of masala brinjal gravy for biryani.
  10. Note: While preparing brinjal gravy curry for chapathi grind the coriander leaves and poppy seeds with coconut. This will give an excellent taste for you recipe.

The taste resembles chicken and mutton kulambu. When compare to other non veg kulamnu the preparation of Egg Kulambu recipe samayal is very easy and simple.

Sambar onion – 1 cup
Tomato – 2
Ginger garlic paste – 2tsp
Coriander powder – 1tsp

  3. Fry half of the onion by adding little oil and keep it aside.
  4. Chop the remaining onion and tomatoes.
  5. Grind coconut, fried onion, coriander leaves,  Poppy and funnel seeds together.
  6. Take a vessel, add little oil and put Cinnamon, ginger garlic paste.
  7. Then add the chopped onion and tomatoes, fry well and add all power ingredients.
  8. Add a cup of water and ground egg kulambu recipe in Tamil ingredients.
  9. Put salt and let to boil for ten to fifteen minutes, finally add boiled egg and mix gently.
  10. Note: you can add water as per your preparation, if you want gravy or curry add less water. For Tamil kulambu making you can add more water. This will taste good for plain rice. The gravy is delicious for variety rice, idli, dosai, chapatti and parota.
